CALLING ALL FOODIES!

I am making an earnest plea for help! There are literally hundreds and hundreds of recipes in my box but meal planning for the week just does not seem to be working. The only things that are sounding good are the calorie and fat laden recipes. This is NOT what we need to be eating!

In the spirit of Menu Plan Monday...I would like to do a little reversing today. If you have a really great low fat, low calorie recipe, would you please post a link for it in the comments? If you don't have a link to your recipe, then I'd be ever so grateful if you'd post the actual recipe in the comments! Weight Watcher recipes are of particular interest, and if you have the points, even better! However, I am desperate for any and all healthy recipes that you can offer!

I have diabetes and really have to watch what I eat. Ok.. I'm supposed to.

The thing I've found to be easiest is to just eat foods as close to their natural state.. rarely use box mixes. After that it's all about portion control. *UGH*

It's about a three hour drive across the state. :)

Recipes? We had broccoli-cheddar soup tonight, but I don't have the recipe handy. :~D

My husband has requested veggies lately, so I've been serving all kinds. Have you ever tried frozen sweet potato fries? (No oil, baked version). Also, sauerkraut (with corned beef), lima beans, roasted red peppers in olive oil... just a few of our more unusual choices lately. I serve them with salmon, chicken etc.

One low cost, low fat meal is bean burritos.
Just take refried beans (you can buy the fat free kind in the can)
low fat cheese (or none at all)
Low carb tortillas
rice (you can mix with salsa)
chopped onion
mix all the ingredients together and roll in the tortilla, it is really yummy, filling, and very healthy.
